Burger with relish pesto and arugula
2 tablespoons Toundra cucumber relish
1 tablespoon pine nuts
1 cup arugula
2-3 sprigs basil
1 clove garlic
1 /2 lemon
1/3 to 1/2 cup olive oil
250g ground beef
50g Bocconcini cheese, thinly sliced
1 tomato sliced
2 burger buns
Put the pine nuts, relish, 3/4 of the arugula, basil, garlic and the juice of half a lemon in a food processor.
Pulse then add the oil slowly until you obtain a pesto. Salt and pepper to taste.
Form patties with the ground beef. Salt and pepper on both sides.
Heat a drizzle of oil in a frying pan over medium high heat .
Cook the beef patties for 4-6 minutes on each side or until desired doneness.
Add a few slices of Bocconcini cheese, cover and let melt for 1-2 minutes.
Heat the buns over to taste. Garnish with the pesto, the beef patty, tomato slices and the remaining arugula.
