Crispy fish burger with tartar sauce

Ingrédients
4 white fish filets, such as cod or hake (400-500g)
¼ cup all-purpose flour
2 eggs
1 tsp hot sauce
¾ cup panko breadcrumbs
1 tsp smoked paprika
½ tsp onion powder
½ tsp salt
Neutral oil for cooking
½ cup mayonnaise
½ cup plain Greek yogurt
¼ cup Toundra Nordic relish
Juice of ½ lemon
1 clove garlic, finely chopped
1 tbsp finely sliced fresh dill
¼ tsp salt
Marinated radishes (optional)
Toundra mini cucumbers, sliced into ribbons
4 burger buns
Romaine lettuce leaves
Préparation
Prepare the fish. Pat dry the filets with paper towels to remove excess water. Season well.
Prepare 3 shallow bowls. In the 1st bowl, place ¼ cup all-purpose flour. In the 2nd bowl, whisk the eggs and mix in some hot sauce (1 tsp). In the 3rd bowl, combine ¾ cup panko breadcrumbs, 1 tsp smoked paprika, ½ tsp onion powder, and ½ tsp salt.
Dip each fish filet in the flour, then in the egg mixture, and then in the panko mixture. Make sure to coat the fish thoroughly.
Prepare the tartar sauce by combining all ingredients in a bowl: ½ cup mayonnaise, ½ cup plain Greek yogurt, ¼ cup Toundra Nordic relish, juice of ½ lemon, 1 clove chopped garlic, 1 tbsp sliced dill, and ¼ tsp salt.
In a large stainless steel or non-stick skillet, add a generous drizzle of oil to cover the bottom of the pan.
When hot, add the fish filets and cook for about 4 minutes on each side.
Toast the burger buns.
Assemble the burgers by spreading tartar sauce on both buns. Add cucumber ribbons and place the fish filets. Top with pickled radishes and lettuce slices.
