Shrimp and chimichurri with pineapple and relish
Pour 2 personnes


250g shrimp
15-20 sprigs parsley
10-15 sprigs coriander
1 clove garlic
1/2 tablespoon Toundra cucumber relish
1 /2 cup cubed pineapple
1 teaspoon chili flakes
1/2 teaspoon dried oregano
1 tablespoon red wine vinegar
1/ 4 to 1/3 cup olive oil
salt & pepper


Place parsley, cilantro, garlic, pineapple, relish, chili flakes, oregano, vinegar and oil in a food processor.
Pulse until smooth 'a smooth sauce. Add salt and pepper to taste.
Heat a drizzle of oil in a frying pan over medium-high heat.
Cook the shrimp for 3-4 minutes on each side until pink . Salt and pepper.
Serve the shrimp with the pineapple chimichurri sauce.
