Strawberry & Tarragon Gazpacho

Ingrédients

4 cups strawberries, hulled and quartered
1 ½ cups English cucumbers, peeled, seeded, and quartered
1 red bell pepper, diced
1 whole red tomato, diced
1/3 cup extra virgin olive oil
2 tbsp red wine vinegar
1 small garlic clove
3 sprigs tarragon
1 1/3 cups white bread, cut into 1-inch cubes
1 tsp salt
Tabasco sauce, to taste
2 oz gin (optional)

Préparation

Mix the strawberries, cucumber, bell pepper, tomato, garlic, oil, tarragon, vinegar, and salt.
Cover tightly and let marinate on the counter for 1 to 3 hours.
Transfer the mixture to a blender and add the bread.
Blend until smooth.
Strain through a fine sieve.
Add the gin (optional) and chill in the refrigerator.
Serve with croutons, tarragon, and small diced strawberries and cucumbers.
